Fresh Shrimp Spring Rolls​

If you’re looking for a fun recipe to try, these fresh wraps are dynamite. Filled with crunchy, colourful veggies they taste even better than they look. Play with protein, swapping in chicken instead of shrimp or go full vegetarian. Oh, and the sauce is EVERYTHING.

Fresh Shrimp Spring Rolls Ingredients

  • 8 x 8-inch rice paper sheets ​
  • 2 oz. cooked vermicelli noodles​
  • Bag of cooked shrimp ​
  • 8 lettuce leaves​
  • 1-2 cups beans sprouts​
  • 2 carrots peeled and julienned​
  • 1 cucumber thinly sliced​ ​

Peanut Dipping Sauce Ingredients

  • 1 tbsp peanut butter ​
  • 2 tbsp hoisin sauce​
  • 1 ½ tbsp lime or lemon juice​
  • 1 minced garlic clove​

Fresh Shrimp Spring Rolls Directions

  1. Cook 2oz. dried rice vermicelli noodles. Drain and set aside.​
  2. Chop all filling ingredients and prepare rice paper sheets.​
  3. To prepare the sheets, add warm water to a large bowl, and quickly dip rice paper for a few seconds, then lay open on a plastic cutting board or plate.​
  4. On ⅓ section of the sheet, layer on ingredients starting with lettuce, veggies, shrimp and noodles. ​
  5. Begin rolling the wrapper over the filling, tucking the edges in, and continue rolling. ​
  6. Make peanut dipping sauce (see below) and enjoy! ​

Peanut Dipping Sauce Steps

  1. Add all ingredients to a bowl and stir with a fork or spoon to combine well.  ​
